VEGAN COUSCOUS "CHEESECAKE"

Nel post precedente avevo parlato dell'evento che si è tenuto a Ferrara con protagonista il "couscous", dopo averne acquistato una confezione mi sono naturalmente messa all'opera per creare qualcosa di buono.

Appena si dice couscous si pensa subito ad un piatto salato, con verdure, e invece no, ho deciso di stupirvi!

La ricetta di oggi è un dolce, una vegan couscous cheesecake, pratica, veloce e con pochi ingredienti!

Questa torta è adatta soprattutto per chi vuole stupire, provare qualcosa di nuovo, per chi ha poco tempo ma ha tanta voglia di dolce e per chi desidera un dessert fresco ed economico!


Ingredienti per la base:

200 gr couscous integrale
1 cucchiaio di cacao amaro
3 cucchiai di zucchero di canna integrale
acqua o latte vegetale

Ingredienti per la crema:

1 vasetto di yogurt alle ciliegie 
4-5 cucchiai di marmellata di frutti di bosco e lamponi
2 cucchiaini di agar agar in polvere
50 ml di acqua o latte vegetale

cocco per guarnire




Il procedimento è semplice, per la base ho preparato il couscous come faccio normalmente, l'ho messo dentro una pentola con lo zucchero e il cacao, ho aggiunto un bicchiere di acqua (il latte vegetale non lo avevo) e l'ho messo sul fornello per 5 minuti a fuoco lento.

Ho trasferito il couscous su una teglia foderata di carta da forno e ho passato il tutto in forno per 10 minuti a 150°.

Nel frattempo ho preparato la crema, ho messo i 2 cucchiaini di agar agar in una pentola e ci ho aggiunto 50ml di acqua, l'ho portato ad ebollizione e dopo 1 minuto ho spento il fuoco; ho versato sopra il vasetto di yogurt e la marmellata, questi ultimi devono essere freddi, infine ho mescolato bene la crema.




Ho tirato fuori dal forno la base di couscous, l'ho ricoperta con la crema e l'ho guarnita con la farina di cocco, ho aspettato che si raffreddasse e l'ho messa in frigo per 3 ore.


La nostra vegan couscous cheesecake è pronta per essere servita!




Non amo le cheesecake alte per questo la mia è bassa, ma se aumentate le dosi potete benissimo farla più alta!

As soon as you say couscous you immediately think of a savory dish with vegetables, but no, I decided to surprise you!
Today's recipes is a dessert, a vegan "cheesecake" couscous, pratical, fast and with few ingredients!

This cake is particularly suitable for those who want to impress someone, try something new, for those who don't have enough time but want something sweet to eat and for those who desire a fresh and cheap dessert! 

Ingredients for the base:
200 gr whole wheat couscous
1 tablespoon unsweetened cocoa powder
3 tablespoons whole cane sugar
water or vegetable milk

Ingredients for the cream:

1 cup of yogurt with cherries
4-5 tablespoons of berries and raspberries jam
2 teaspoons of agar agar powder
50ml of water or vegetable milk

The process is simple, for the base I prepared the couscous as I normally do, I put it in a saucepan with sugar and cocoa, I added a glass of water (I hadn't the vegetable milk) and I put it on the stove over low heat for 5 minutes.
I transferred the couscous on a baking sheet lined with parchement paper and I cooked in the oven for 10 minutes at 150°.

Meanwhile I prepared the cream, I put 2 teaspoons of agar agar in a pot, and I added 50ml of water, I have brought to a boil and after one minute I put out the fire, I have poured over it the yogurt and jam, the latter must be cold, finally I mixed the cream.



I pulled out the couscous base from the oven, I covered it with the cream and I garnished with coconut flour, I waited for it to cool and I put it in the fridge for 3 hours. 

Our vegan couscous "cheesecake" is ready to be served!


I don't like high cheesecake that is why mine is low, but if you like it higher you can increase the doses!
